1) Brut NV
Type: Champagne Brut, Non Vintage from Grand Cru vineyards
Grape Varieties: 80% Pinot Noir, 20% Chardonnay
Maturation: 20% of the blend is matured in 40Hl casks. Base of Pinot Noir matured in Burgundy barrels of 228L. Chardonnay base matured in barrels from Sauternes Grand Cru
Ageing on lees: 4 years.
Dosage: 7g/L
2) Blanc de Blancs
Type: Champagne Blanc de Blancs Brut, Non Vintage from Grand Cru vineyards
Grape Varieties: 100% Chardonnay
Maturation: 30% of the blend is matured in 25Hl casks. Chardonnay base matured in barrels from Sauternes Grand Cru
Ageing on lees: 5 years
Dosage: 6g/L
3) Rosé Brut
Type: Champagne Rosé Brut, Non Vintage from Grand Cru vineyards
Grape Varieties: 89% Pinot Noir (including 15% red wine), 11% Chardonnay
Maturation: 50% of the dosage base is composed of Chardonnay, aged in barrels from Sauternes Grand Cru. 50% of the dosage base is composed of Pinot Noir, aged in Burgundy casks (aged “3 wines”)
Ageing on lees: 3-4 years
Dosage: 5g/L
4) Ratafia Pinot Noir
Type: Ratafia (17 % Alcohol content) , Non Vintage
Ratafia is obtained by macerating grape must and wine brandy (Fine de Champagne).
Grape Varieties: 100% Pinot Noir
Winemaking: Our Fine de Champagne is aged in barrels of Cognac and Sauternes.
