1) Champagne Collery Extra Brut NV, Grand Cru

Type: Champagne Extra Brut, Non Vintage from Grand Cru vineyards

Grape Varieties: 80% Pinot Noir,  20% Chardonnay 

Maturation: 20% of the blend is matured in 40Hl casks. Chardonnay base matured in barrels from Sauternes Grand Cru, Pinot Noir based matured in 228L barrels from Burgundy

Ageing on lees: 4 years.

Dosage: 2g/L

2) Champagne Collery Blanc de Blancs Brut NV, Grand Cru

Type: Champagne Blanc de Blancs Brut, Non Vintage from Grand Cru vineyards

Grape Varieties: 100% Chardonnay 

Maturation: 30% of the blend is matured in 25Hl casks. Chardonnay base matured in barrels from Sauternes Grand Cru

Ageing on lees: 5 years

Dosage: 6g/L

3) Champagne Collery Blanc de Noirs Brut NV, Grand Cru

Type: Champagne Blanc de Noirs Brut, Non Vintage from Grand Cru vineyards

Grape Varieties: 100% Pinot Noir

Maturation: Base of Pinot Noir matured in Burgundy barrels of 228L

Ageing on lees: 6 years

Dosage: 5g/L

4) Collery Ratafia Chardonnay

Ratafia is made by macerating grape must and wine brandy (fine champagne aged in Cognac and Sauternes barrels).

It is aged in oak barrels that have matured villages from Cognac and Sauternes, to which is added fresh grape juice from the harvest. We use only the first quality of musts, offering the perfect balance between fruitiness and tension.

Type:  Ratafia (17 % Alcohol content)

Grape Varieties:  100% Chardonnay 

Winemaking:  Our Fine de Champagne is aged in barrels of Sauternes Grand Cru.

Aged in barrels of Sauternes Grand Cru for a minimum of 11 months using the Solera method.

Winemaking: Ratafia is made by macerating grape must and wine brandy (fine de champagne aged in Cognac and Sauternes barrels).

The Pinot Noir juice used is extracted by the process known as "saignée". The grapes are destemmed, and the berries are left in maceration in a vat so that the skins bring their tannins and flavours to the juice. When the juice reaches the required qualities and color, it is racked, presenting a deep pink color and pronounced aromas of red fruits. It is then aged in barrels of Sauternes Grand Cru for a minimum of 11 months using the Solera method.
